Seafood - Smoked Salmon Watercress Salad With Red Onion Caper Vinaigrette

Start with a salad of smoked salmon and watercress. Try to buy the commercial bagged watercress that already has been cleaned to speed things along, or you may substitute other mixed salad greens. (I like to make sure there are some bitter ones, such as radicchio and arugula, along with milder greens, such as butter lettuce or baby spinach.) Also, because this is such a simple salad, all the ingredients should be top-quality. So spring for the best smoked salmon you can find.

Soups Stews And Chili - Quick Hoppin John Soup

This is a modification of my father's hoppin' john recipe. The only difference between his and mine is the use of tomatoes. It's a great recipe for the holidays (New Year's) or any time during winter months. There are many versions of this recipe here, but this one is quick so you can throw it together after a long day at work for the whole family to enjoy!

Cheese - Man Lovin Potatoes

Seafood - Parchment Salmon Packages With Asparagus

These elegant packets look complicated, yet are quite simple to prepare. A seasoned salmon fillet is placed onto asparagus spears and wrapped in parchment paper using a French cooking method known as 'en papillote'. For maximum effect, snip the packets open at the dinner table, so the diner is presented with the wonderful, concentrated aromas! Serve with rice or fingerling potatoes.

Herbs And Spices - Oranged Cranberry Sauce

This recipe was graciously shared with me by a Jamaican friend, many years ago. It makes a delicious sauce, different from any other cranberry sauce I've ever tasted or made. It does not "gel" but you do want to cook it long enough to make a good, thick consistency. You can use 1 tablespoon of excellent quality ground cinnamon instead of the cinnamon stick, if you prefer. Fruits And Vegetables - Drupey Pie

I added fresh, ripe nectarines and apricots to this sour cherry pie. These fruits are drupe fruits meaning they are fleshy with a hard stone or seed in the middle. The pie was summery and delicious! I really like to use turbinado sugar--it's less processed and has a good flavor--but white sugar would be fine, too.

Side Dish - Dianes Colcannon

While Colcannon seems to be associated with St. Patrick's Day, I love the combination of potatoes, cabbage, onion and bacon all through the cooler months of Fall and Winter! I attend an annual St. Patty's Day party and this is the dish I'm always asked to bring... and I'm happy to say that the bowl comes home empty every time!
